I know I said I’d come back after finals with a ton of new recipes for you, and that’s still true. But I just made something so great and so easy and so perfect for all of you studying that I decided to take a break from Chinese history to tell you about it.
This cake only takes five minutes to make, and is perfect when you need a little pick-me-up while studying. So mix one up and enjoy your break. You deserve it. Finals are hard.
Hot Chocolate Mug Cake
Serves one. Adapted from here.
4 Tbsp flour
3 Tbsp sugar
1/2 tsp baking powder
1 packet hot chocolate mix (mine had little marshmallows in it!)
3 1/2 Tbsp milk (skim, soy, 2%, whatever)
3 Tbsp vegetable oil
dash vanilla extract
1 tsp cocoa powder – optional, if you want it extra chocolatey
1. Use a fork to whisk everything together in a large coffee mug.
2. Microwave for 1 minute 30 seconds, or until a knife comes out clean. (Try 1:30 first, then 30 seconds more at a time if it needs it. Mine didn’t.)
3. EAT. Top with chocolate syrup, whipped cream, or just enjoy as is.
